7/18/10 - What's for Dinner?

Watering this morning I found that it was time to pick some tomatoes and eggplant. I recently read that once picked, you shouldn't let eggplants sit too long. So, I surfed the web for some eggplant ideas. I found an interesting recipe on Foodnetwork.com by Giada DeLaurentiis : Grilled Eggplant and Goat Cheese Salad. I harvested some sweet and purple basil for the recipe and made saffron rice to pair with the dish. Overall, this dish is perfect for summer with fresh ingredients like mint, eggplant, and basil.
