7/12/10 - Stuffed Eggplant

I used a recipe from the Almost Turkish blog to create this stuffed eggplant. (http://almostturkish.blogspot.com/2007/09/stuffed-eggplants-karnyark.html) I did change the recipe around, though. So, I'm not sure if it would be considered Turkish ... but, it WAS delicious!

I swapped out ground beef with ground turkey breast, parsley with dill, and I added a Greek seasoning blend (from Penzey's) to give the turkey some needed flavor. The end result was yummy. I regret frying the eggplant. I'm not a big fryer and I found a roasting option in another Almost Turkish recipe after the fact. Anyway ... it was still good and I'm learning a lot about cooking with eggplant.
